What’s the restaurant in a nutshell?

Forest is a unique restaurant in Marseille, with a second location at the Musée d’Art Moderne in Paris. It’s helmed by uber-hot chef Julien Sebbag, who is passionate about textural Mediterranean-inflected dishes and dripping greenery. The Marseille branch boasts stunning interiors by Julien Sebban of Paris-based collective Uchronia, who uses shades of terracotta, lime-washed ochre surfaces, perforated terracotta brick, burnt-orange banquettes and olivewood furnishings to create a mesmerising atmosphere. A striking stained-glass dome above the bar adds to the visual feast.

What are the signature dishes?

Chef Julien Sebbag’s menu at Forest is designed around the concept of shared plates, featuring some of his Parisian hits and local ingredients. Notable dishes include sage butter candles served with seasonal hummus, anise-flavoured halla brioche, beet gnocchi with poutargue and Pastis-soaked baba for dessert. The waterfront location in Marseille also features a “crudo” bar, where tartares and carpaccios are crafted based on the availability of fresh fish.

Drinks, anyone?

Forest’s drinks menu showcases the flavours and culture of the region, featuring a signature cocktail called Le Maquis. This cocktail is a delightful blend of Ricard, Double Jus 30&40, lemon juice, Calissons syrup and aquafaba, creating a refreshing and aromatic drink that perfectly complements the Mediterranean-inspired dishes. Pastis, a popular anise-flavoured spirit, is also highlighted on the menu, as it is a typical drink in Marseille. Notably, Pastis is used to soak the dessert baba, infusing the dish with the spirit’s characteristic flavour.
